Make these yummy muffins on the weekend and then have a nutritious quick breakfast for the rest of the week! Modified from a recipe I saw on Pinterest HERE.
PREP/COOK TIME: about 30 minutes
INGREDIENTS:
2 Cups Old Fashioned Oats (Quick Oats should work too)
1 Scoop Vanilla Whey Protein Powder
1 Cup Vanilla Fat Free Greek Yogurt (or plain)
1 Cup Canned Pumpkin
1/4 Cup Honey
1/4 Unsweetened Applesauce
1 Tsp Pumpkin Pie Spice
1 1/2 Tsp Baking Powder
1/2 Tsp Baking Soda

1. Preheat oven to 400 degrees F
2. Place all ingredients in a blender and blend thoroughly.
(It may be helpful to add the oats 1/2 Cup at a time. It is likely you will have to stop and stir a few times.)
3. Spray a muffin pan with preferred cooking spray. Muffin wrappers are not recommended.
4. Pour mix evenly among the 12 muffin cups in the pan.
5. Bake for approximately 20 minutes. Let sit for 10 minutes after removing from the oven. Enjoy!
***NOTE: These will be a little more moist and dense than a typical muffin (more like a dense brownie texture). They will sink a little in the few minutes after you remove them from the oven so don't be alarmed when yours do.
